Chickielady.... That sounds wonderfully delicious! I wonder if it would make ranch dressing if I just got the hidden valley ranch package? Ranch dressing never last very long in our house. The kids use it as a dip for just about everything. Now to turn Kefir into ranch dressing.... I'll give that a shot!! Thanks for the idea.

Earnie.... I have always wanted to try to make my own mayo!! Thanks for the recipie link. I paid like $5 for Miracle Whip today...crazy!! My clan loves mayo on almost everything. Going to make this soon. Yummmmyyyyy

Ernie I already had the package (of hidden valley farms Blue cheese dressing) which makes 1 gallon of blue cheese dressing, and it calls for buttermilk, and mayo, and I always toss one of those containers of crumbles in..but not this time !!
That was the cool part..when I strained the kefir jar, picked out the noodles and returned them to their domain..I had whey that ran through, and the cottage cheese..I used them both..the cottage cheesie bits, are perfect for the dressing !!
No need for crumbles, but that is another issue..if we add the crumbles, they will have the blue chees culture..AHA!!
So, my next venture is straining the kefir in the collander, take the noodles out, return the kefir noodly-grains to their domain jar..and then take the cottage cheese, add a handful of crumbles, and put it all in a cheescloth to squeeze.
After the sqeeze, I am thinking a wax dip, to prevent wierd yeast cultures from getting in, and then store in a cool, dark place like a cave in Germany

That IS the stuff I use..but at the Grocery outlet here you can get cheap discountinued or dented stuff..and there was cases of Hidden Valley Blue Cheese Dressing..makes 1 gallon, a BIG pack used for restaurants..and they were like $2 a bag....but yes you can buy the smaller bags.

So now I have a 1 gallon jar of kefir and a 1 gallon jar of to die for blue cheese dressing...in my fridge.

And I really want to strain it via cheese clothe and try to see if the blue mold will culture and make more blue cheese !!!!!!

I also asked about hatching the eggs from my hens after I have wormed, and he said looks OK..
So, I got a few slices of wheat bread, cubed with a knife, and got my syringe and all out, drew up the Ivomec..and did 7 drops on each bread cube.
Then I went chicken fishing with my DH..and a few hens were pigs and ate 2 cubes..and there is 1 Cock Bird I have that will get the bread and offer it to one of his girls

but other than that..worming all these birds was not bad.
I did do wazine 2 days ago to make sure their systems were not loaded..but there was no sign of worms, but it is out of the way and now on with egg time !!!
I will tell ya what, my flock LOVE whey I give them every few days in a small bowl..they drink it as if in a trance..like it is BOOZE!!

I usually use kefir for ranch. It turns out nice and tangy.

for making Mayo, you can use the whey to make it last longer. Normal fresh mayo is only good for 1 maybe 2 weeks. If you add about 1 tablespoon of whey for every 2 egg yolks, it will last for a couple of months.

I'm going to try to make this tomorrow morning. One question though.... how do you get the wrey out away from the kefir without it mixing all up? Would a turkey baster work?

first I separate the kefir grains out. Then I take a colander and place it over a bowl. I put 1 layer of plain white paper towel (or cheese cloth, or or a friend uses muslin cloth) in the colander. Then I pore the kefir onto the paper towel. The whey drains through. I usually let it go overnight, but that is because I drain and add milk to my kefir in the evenings.

OK...back to the bleu cheese dressing. I can not have a gallon of bleu chess dressing in the house because I would not fit though the door to get out after I,d eaten the whole gallon.So i make mine up for just a few days. I use half mayo and half kefir, unstrained(grains out) I like it a little thinner so I can use a little less. Add crumbled bleu cheese till your heart content. It is better to wait a few hours to let the flavors meld. I sometimes add crushed garlic for more flavor. I also use this as a side to hot wings! Dill is another favorite.
 
Oh yes Ranch would be great also..I would imagine tartar sauce would be excellent !

I have to locate somewhere to buy cheese clothe out here somewhere, and get DH to cut me a wooden pressure plate that will fit inside a metal coffee can..and then we will press some kefir crumbles with blue cheese and see what we get...
