The duck looks nice.

I don't think the bleeding is going to be a problem. There isn't a lot of blood when you bleed them out and you've soaked the duck in water which will get more of the blood out.

I don't worry about the lungs. Around here, they tend to get roasted with the bird and then fished out and fed as a treat to the dogs. They won't ruin the flavor of your bird if they are still in there. They are edible by humans after they are roasted, too, if you happen to like them. As organ meat for the table, they are called the "lights".
 
Looks great to me too. It is supposed to rain today here, if it doesn't I'm planning on a few for Thanksgiving dinner.
 
Sounds like me doing the turkey for our thanksgiving... took me a while to work up the courage too, I'm hoping it's going to get easier for the next time :S.

I got lucky with the turkeys lungs (and with gloved hands...) was able to scoop them all out from between the ribs fairly easily. The hose trick is a good one though! I'll have to remember that for next time.
 
Well, I must say that I am rather proud of myself. Having processed my first and not having one single problem with eating it.

None of the problems I was worried about came up.

I was surprised at how beef-like it was, I had read that it was but without my own experience, didn't really believe it. I ended up cutting the bird in half to cook it since it is just DH and I. I want to be able to cook the other breast and thigh/drumstick in different ways so I can experiment.

I am stuffed. Happy Thanksgiving!

Nah, I don't worry if a little lung is left in any of the birds I process. A little blood isn't an issue either, as you have already found out since soaking it for a few days gets it all out anyway.

Again, it was a great learning experience. I wish there was a nice quiet way of dispatching. Something less "violent" than an axe. After doing the deed, I think that throat slitting would be easier. I have read on BYC that it is difficult in Muscovy. I am thinking I will try using a scalpel next time. Or buying an extra sharp knife.
