Processed Cornish X for Sale (Lapeer, MI)

It is nice to recoup some of the costs. Ours works out to where the ones we sell pay for all the feed so we eat ours for free! Labor is not included!!
 
I process my own venison, make about 8 different kinds of sausage, smoke alot of chickens, press my own cider, makes all of our jellies and jams, and can all kinds of fruits and vegetables. Many of my friends think I'm nuts to spend so much time and energy on things that can be bought at the store. All I can do is look and them and shake my head. The ignorant bliss of the lazy or uninformed is amazing. I applaud all of you ladies who are willing to take on all of these tasks because you know the reason why I do them.

I made a smoker from an upright freezer. I put forty years of experience into the design so that it recirculates the heat and smoke. I used a electric clothers dryer heating element. I have a separate box for my smoke source that is piped in so that I can either cold smoke or hot smoke. I can smoke 48 chickens at one time. Brined and then smoked chicken is food fit for a king or me.

I did 20 of them and it's alot of work. BTW it's cold here and sleeting. Ick!
