processing help in north east tx oct 29/nov 5

i have 120 cornish -x and some ee's ....i want to slaughter them on the 29th of oct and or nov 5....i wonder if there are some people who would like to swap out helping or come learn more about it....i have a fish fryer for a scalder...and i bought a tub plucker.....so a sharp knife is all you need ....
