Processing Pork

If there is a TSC near you or you can order online, this is a great book, How to Raise Pigs by Philip Hascheider. Has an entire section on home processing plus a lot of other neat things.
 
You can also go to Mother Earth News magazines website and look up the Morton's Salt book, they have the whole book online, it is in sections. From butchering the hog to curing the meat. I printed one out when we had our hog butchered back in Oct. It has a lot of helpful info in it.
