Processing Quail

Quail fajitas!? Sounds delicious. Do you have a recipe or do you just cook with typical fajita spices and shred the meat?


I'd have to ask my wife, she makes it from scratch. I'll have her log on later and post it here.

Hi, Iam Ehumans wife, Jen, & I make quail fajitas using bell peppers, yellow onions, cilantro, cut & deboned quail. The trick is the spices. I use garlic powder, liquid smoke, sweet mesquite seasoning (from Costco) & sometimes cumin. Depending on how hot you like it, you can add spices, like cajun, or cayenne, or even a pre mixed carne asada seasoning for meats,cut or slice up everything, mix it together, get your pan nice & hot, put in a few tbsp of oil (veg, canola or olive oil) & cook/stir fry enough to cover the bottom of your pan. I place the cooked portion in a sealed glass bowl (to retain heat) while I cook the rest.
