I never get attached to roosters. We eat a lot of roosters. We always skin them, its easier than plucking. lol
I purchased 3 hens 3 yrs ago to use as broody hens but only 1 of them has gone broody since I added my rooster. I'm replacing him next year with one of his own chicks .They're only 6 weeks old

Get some Orphingtons, Games, Cochins, or even Silkies if you want some serious broodies. The best broodies we have are the Game mixes. They are fierce and dedicated mothers like the Games but without the intensely aggressive disposition that the pure Games have.

We tend to replace our "yard" roosters that run with the free ranged layers every so many years to keep genetics fresh. However, the younger roosters tend to be harder on the hens so I watch them closely and butcher any that make a nuisance of themselves. My old yard rooster, King, is slowing down and will eventually be overthrown by the younger roosters free ranging. I will weed through and pick the roosters that don't harrass the hens too much. The hens like having a rooster around, believe it or not, and they all adore the old guy. I am letting him enjoy his rein, but I worry his time in charge is running out. He is around 4-5 years old now.
 
I've not read much on Phoenix chickens, but by the look of them I would wager they are closely related to Game chickens and likely have Game ancestry.
Yes they have quite a bit of game in them.This is the ancestry of the modern Phoenix.

"History tells us that the Onagadori was developed from crosses of Shokuku and Totenko, and possibly Minohiki long-tail chicken breeds of Japan. It is these chickens, crossed with Leghorn, Malay, Modern Game, Old English Game, Ramelsloher, Bruegge Game, Yokohama, and Kruper that produced the modern Phoenix."

If I didn't already have so many breeds, I would get some Phoenix chickens. I have always loved the look of them, since they look like a long-tailed Game.

If I decide to hatch a lot of chicks I'll take your advise thanks!
