I was little hard on the liver too. Some of them came out a bit crushed. I’m going to have to work on my technique!

They are fragile....as long as you don't crush the bile sack you're good to go.

So, a couple of times the bile was released and I immediately rinsed it off. Is that good enough or will it be tainted?

I soak those overnight in salt water

The lining is what I was calling cartilage. Lining is a much better term. It’s stiff like cartilage, ya know?

And I called it a membrane! Getting it off is a bit like peeling off a sticker. One you can get a little bit of separatoin along an edge, you can just peel the rest away.

When that happens I rinse it off. I rinse well but then just continue.
