pullet eggs

I remember the pullet eggs as being even more flavorful with a larger yolk to white ratio. I made a couple of lemon pies with them and the brilliant color of the pies, and of course the taste was just fabulous.

I have a friend, who told me the other day...."you know I only eat the egg whites and throw the yolk away". Yikes. And I had been giving her eggs for months......no more, She has seen her last egg from my house......hopefuly the chickens will never find out.

DD, I noticed that pullet eggs have a large yolk which almost filled the shell, too.
If you use them in cakes you need twice as many.
 
My grandma does the same thing - I think for the same reason! Can't convince her otherwise...
 
I pickle all of our pullet eggs. Those itty bitty eggs soak up the pickle juices wonderfully. Mmm- now I'm going to have a couple of pickled pullet eggs for breakfast. Om nom nom :lol:
