    Here's one I've done and it's good.

    6 Quail, cut up
    8 TBS butter
    Flour seasoned with salt & pepper
    1 onion, sliced thin
    1 bay leaf
    6 mushrooms, sliced
    1 cup sherry

    Dust quail in flour, brown in melted butter. Transfer to baking pan. Cook onion (in same frying pan you cooked the quail in) till transparent. Add bay leaf and mushrooms. Cook 1-2 mins, add sherry, stir. Remove bay leaf. Pour over quail. Bake covered for 45 mins at 375.

    My Dad used to not split the breast stuff it with sausage, dust them in flour and fry.
