Question about brining.....

Do you actually have to soak the birds in the fridge overnight or can you just butcher, wash well and then vacuum pack?

I only have one fridge and I have 34 broilers that will all be done on the same day. I have no room for all the birds in the fridge.

So my ? is..... to brine or not to brine?
 
I put mine in the freezer with the intention of brining after thawing but before cooking or smoking. Did one so far and it was scrumptious.
