Still eatin' mine and aint' got sick over no over-night turkey yet......My Mother has cooked a turkey this way since before us 3 kids were born and the oldest is 43.....so glad my brother isn't on this site

I suppose if the turkey was thawed for a while or sat at room temp and then was cooked at 180 degrees, was 30 pounds and full of stuffing, it could possibly get someone sick. It's a good theory but in reality it's bunk.

I think that "other forum" is trying to just play it safe.

The same rules hold true for fish yet about a billion of us eat raw fish and other meats quite often. No, I wouldn't eat raw chicken or hamburger from a grocery store.
 
My Grandmother did it this way ,My Mother did it this way and I have always done it this way.We all lived to tell about it.
Waking up to the smell of turkey filling the house. I cant imagine any other way to have Thanksgiving.200 degrees all night long.
 
I have always cooked mine alnight in the oven on 250. I put it in about 1 or 2 in the morning and then go to bed. It makes dh drool alnight long. He has been drooling thinking about it for the past 2 weeks. None of us have ever gotten sick from it and I have been cooking it this way for over 20 years now. I dont stuff it till the next morning and then raise the temp to 325 and bake it for about an hour the dressing is done anyway it basically just warms it up. everyone in the family says I fix the best turkey they have ate. even my family that lives in Indiana says they have never eaten any better. I dont know sometimes I would rather have someone elses cooking.
 
I think Im going to try to slow bake a turkey this year. I know Ive tried that this year with rotisserie chicken, and it turns out wonderful. Why not a turkey too?
