Question about pressure canning...help!!!

I have a large AA and on the rare occasion that I lose liquid from the jars and the tops have sealed I just invert the jars after they cool and have had no problems thus far. Did you put a thin layer of petroleum jelly on both halves of the metal seal? If you do reprocess be sure to change the tops. They might be defective or there might have been food particles on the rim of the jar. When I first got mine I had a tendency to put too much water in the canner and it caused some of the jars to boil out a bit. I think 2" is recommended for mine. Hope something here will help. Careful with the hammer! My instructions say to insert a screwdriver between the halves of the seal and pry. Happy canning!

Some of the new pressure cookers, like the Kuhn Rikon are very quiet and don't have that "rocker" on the top to make that tapping noise you are talking about. If your pressure valve has a spring action it will not make noise unless you over pressure and it begins to release on it's own. Then it just sounds like a hissing noise. Another reason why I love my pressure cookers.

The inverting is to make sure they aren't leaking, right?

We did the petroleum jelly, and I knew about the screwdriver, but you have to turn it first to disengage two small metal "hooks" that are holding the lid down.

Thanks.
