Question - Digital Vs Analog Thermometers & Hygrometers

Hi all - What are peoples experiences with digital vs analog equipment in their incubators? Is there a clear reliability of one over the other? Happy to receive recommendations but I must disclose that I live in NZ so will only be able to purchase what is available locally. There are several digital options which are primarily intended for lizard enclosures - those do dual temp & humidity - some with remote sensors which I can easily place in my incubator. Thoughts!?
 
I use two calibrated dial meat type thermometers. One goes in as-is, one goes in and a wick is attached and dropped into the water pan. By referring to a wet bulb chart, I can easily see what the ambient humidity is in the incubator. For example, I usually look for my wet bulb to be 85F when my temperature is 100F, that tells me I'm smack between 50-55% humidity.

Thanks! Yes it is becoming more evident (the more research I do) that analog appears to be the more reliable way to go over digital - at least as far as hygrometers go. I had one product supplier even give me an honest reply that their digital hygrometers would not be considered overly reliable in fan forced incubators where the temperature is above 37 Degrees C. Nice to see some professional honesty there!!
