These are called nopales, right? Or are those a different cactus, beavertails?

I think nopales refers to the cactus leaves and not the fruit? But the leaves and fruit do come from the same type of cactus. I have eaten the leaves before, but not raw. I'm not a fan.

The key to cooking nopales is to steam them in just a bit of oil and their own juices, and to cook them until the stringy "goo" disappears. It takes patience and close attention to keep them from burning or drying out, but they're actually pretty good!

EDIT to add: And yes, "nopales" refers to the leaves, or "pads" of the prickly pear cactus.
