Instant Pot Lentil Soup

1 lb lentils, rinsed and picked over
2 cups spinach or kale leaves (gonna try chard next!)
1 qt canned tomatoes, undrained
1 cup chopped onion
2 cloves garlic, minced
1 cup chopped carrot
1/8 teaspoon black pepper, or to taste
1/2 teaspoon salt
3 cups green salsa (I use mild because I'm a wimp.)
3 cups water
1 bay leaf
2 tablespoons olive oil

Use the Saute function on the Instant Pot, and saute the onion in the olive oil for about 3 minutes.
Add carrots, saute 3 more minutes, or until the onion is clear-ish.
Add garlic and saute 1-2 minutes.
Pour in the canned tomatoes, water, and salsa.
Stir in the spinach, lentils, salt, pepper, and bay leaf.
Lock the lid, high pressure for 8 minutes.
Let the pressure disipate on its own (natural pressure release)

I have also made it with a mixture of bone broth and water, to make 6 cups liquid.

This will get thicker as it sits, so you may want to add some water when you reheat it the next day. If there's any left, of course.

I like a lot of different soups, so not sure I have a favorite. Just made Potato yesterday.
