Quiche

Paganfish, thank you for that recipe - it sounds wonderful. My DH doesn't eat cheese (how weird is that?), but I love it. Every once in a while I will make something acceptable to him, and a big dish of macaroni and cheese for me. I think next time it will be your recipe for me, it sounds delicious.

Quiche, for those who don't know, does not require cheese. You need a pie crust - homemade is best, bought will do - and a filling - I use sauteed onions or leeks, add some broccoli, or spinach (cooked), some fried bacon, cubed ham, some cut up left over beef or pork - and some beaten eggs with a bit of milk, and seasoning. Pour the eggs over the filling, and bake. I usually spread a bit of mustard over the bottom of the crust before putting in the filling; it adds to the flavor, as well as keeping the crust from getting so soggy. Look in any basic cookbook, or google quiche, to get some ideas. Of course, you can mix some cheese into the filling, and/or sprinkle some on top, however it is not a requirement. The Germans make a lovely onion tart, which is basically a quiche, which traditionally has no cheese at all. (For those with an interest in history and/or language: Quiche stems from the German word "Kueche", which means "kitchen")
 
QUICHE

1 9-inch pie crust
6 slices bacon, cooked crisp and crumbled (or)
1 cup cooked & cubed ham(or)
1 cup diced cooked chicken
1 medium onion, chopped
4 oz. sliced mushrooms (optional)
8 oz. shredded Swiss cheese
5 eggs, beaten
1 tablespoon all-purpose flour
3/4 teaspoon salt
1 1/2 cups evaporated milk
Dash nutmeg

Preheat oven to 400 degrees.
Saute lightly the onions and mushrooms in 1 tablespoon of the bacon fat or oil.

Layer in pie crust the bacon, ham or chicken, the onions, mushrooms and ending with the cheese.

Whisk together the eggs, milk, flour and salt. Pour over the other ingredients. It won't look like enough, but it will come together in the oven.

Bake at 400 degrees for 10 minutes. Reduce heat to 350 and bake 30 minutes or until top is golden and center is firm.
Let cool about 15 minutes. It's also good at room temperature.

Note: I also add leftover veggies such as broccoli, spinach (squeezed dry), etc.
 
I LOVE quiche and just cooked up 4 pies this week.
I try to use different cheeses but swiss is typical. I did go somewhere and orderd the quiche, they used puff pastry dough, and lined it in an individual sized casserole dish, added the ingredients and folded it over. It was great!
This way, you can create the basic egg, cheese, cream, then kids can add what they want to it. Mine like ham, and broccoli.

Here's our basic quiche recipe, below. We make it fancy sometimes (with bacon, sauteed onions or leeks, spinach and gruyere cheese) but often just throw in whatever we have around, like maybe do a broccoli and cheddar one, or sausage and kale, whatever. Even leftovers are great in quiche!!!! I usually make a couple at a time for dinner the first night, breakfast and lunch the next day: YUMMY!!!!!

Basic Quiche:
1 3/4 cups liquid TO INCLUDE 3 eggs plus whatever dairy you want (ie milk, cream, sour cream)
1/2 to 1 cup grated cheese (gruyere is traditional but anything works)
salt and pepper, a dash of nutmeg

Pour into a pre-baked pie shell, bake 30-35 minutes at 375 degrees F.


If you don't prebake the pie crust it's OK, just a little soggy... I sometimes cheat and buy the premade shells in the health-food aisle (no trans-fats or hydrogenated oils) but usually just make one from scratch.

This recipe is called Quiche for a Crowd, it is made in a 13 x 9 baking dish and cut into squares.

2 packages Pillsbury Already Pie Crust or homemade
8 oz softened cream cheese
12 eggs
4 cups milk
1/3 cup grated Parmesan cheese
2 TBL chopped chives
2 1/2 teas salt
1/2 teas oregano ( I use basil )
1/4 teas pepper ( I use more)
1 1/2 cups (6 oz) shredded Jarlsberg cheese
1 1/2 cups shredded Gruyere cheese

Preheat oven to 375. Lay the pie crust evenly into the 13 x 9 baking dish; flute the edges. In large bowl with mixer at low speed, beat cream cheese until smooth. Add eggs one at a time until well blended. Beat in milk and next 5 ingredients. Sprinkle shredded cheese over bottom of pie crust. Pour egg mixture over cheeses. Bake 45 minutes or until knife inserted in center comes out clean. Enjoy!

If I get crumbs on the keyboard okie, it's all your fault! I went to the kitchen to get my recipe book and heard the german choc. cake calling my name....so I'm a eatin' and a typin'!

Kitchen Sink Quiche

Lightly grease a 9" pie plate.

Wash and chop any variety of fresh veggies:
brocolli, cauliflower, carrots, yellow squash, onion, eggplant, peppers (red, yellow, green, etc), mushrooms, asparagus, tomato, etc.

Fill pie plate with 1/2 of the veggies.
Sprinkle with 3/4 c. shredded cheddar cheese
Add other half of veggies.
Mix together 3 eggs, 3/4 c. bisquik, and 3/4 c. milk.
Pour over veggies.
Bake @ 400 deg. for approx. 30 minutes.
Top with another 3/4 c. shredded cheddar cheese
Bake for an additional 10 minutes.
 
All these yummie sounding recipes are making me hungry. And I have meat thawed out for meatloaf, it sounded good this morning..... Looks like we're having quiche tomorrow..

Gritsar, that sounds similar to my recipe. I use whatever we have... whatever sounds good at the time.

You can also use (thawed) frozen veggies, I almost always add onions (I can't get enough onions!)

I prefer swiss in a quiche, but we often have cheddar and use that... we've also used mozzarella before. When we use mozz, it's so mild I prefer to add a little parmesan or romano if we have it, too.

What else is good?

Oh! Artichoke hearts are GREAT! We also did a bacon-mushroom-garlic-black olive-feta that was yummy, too.

I can't get enough savory, cheesy eggs in flaky crust.
