Quiche

I have a spinach and cheese quiche recipe I am hunting for. When I find it I'll post it. When I do find it it might be supper that day! These recipes look scrumptious!
 
Making me drool............. LOL

I had 17 eggs by this morning - but so far the kids and I have put a rather large dent in that, I'm down to 7..... once these kids start eating them - there is no stopping! I've got four boiling right now (Incl my two green eggs)
 
Spinach and cheese Quiche

1 - 9inch pie shell prebaked (fill with beans or rice as a weight to keep it from bulking and bake the pie crust until done)

4 handfuls of fresh spinach - rinse, shake off excess water, place in a casserole dish with lid, microwave for 5 min. Remove and drain. When cool enough to handle squeeze out the water. (You can use a box of frozen chopped spinach if you need to, just microwave it until hot and cooked through and squeeze out all the extra water.)

1 small onion, sauteed in 1/2 stick of butter and a sprinkle of garlic powder or one or two garlic cloves chopped finely. When onions are clear mix in the cooked spinach. Remove from heat.

Spread 1/2 cup cottage cheese on the bottom of your pie shell. Add the spinach and onion as the next layer. Sprinkle 1/2 - 1 cup grated cheese over the top (you can use swiss or cheddar or mozzarella or a combination of cheeses).

In a bowl, beat 4 eggs, 3/4 cup of milk, a pinch of salt, a dash of pepper, and a dusting of nutmeg until well combined. Pour over the cheese layer.

Bake in a preheated oven at 350F degrees for 40 - 45 min or until the eggs are set.
 
These recipes are all spectacular!! Quiche is one of my very favorite meals....theres so many variations you can make. Great ideas here from everyone. Keep em coming!

I had to go buy eggs....do you know how much I hate doing that?
 
Miss Prissy, I have never used the cottage cheese before in quiche. That just sounds soooo good. The only time I like cooked spinach is in quiche & lasagna..."its all about the cheese"...

Here's one of my favorites (but only 1 egg! - Sorry!).

Zucchini Quiche

Deep Dish Pie Crust
3 Medium Zucchini
1 Egg
1 Large Onion
2 Tbsp Butter
1/2 lb Mozzerella Cheese cut into small cubes
3/4 Cup Italian Grated Cheese
Pepper
Garlic Salt

Peel zucchini and slice.
Fry with sliced up onion and butter.
Drain and mix with everything else.
Pour into crust.
Bake at 350 for 30 minutes.
Let cool.
Sprinkle with bread crumbs (optional).
 
Here is my easy-peasy quiche recipe (one of the few things I can cook...)

4 cups shredded cheddar
2 cups milk
4-5 big eggs
1 4 oz can diced ortega chiles (they are not hot)
1 heaping cup bisquick

Spray a 13x9x2 pan with Pam
Put cheese in pan and top with chilies.
Mix milk, eggs, and bisquick in a blender for 1 1/2 to 2 minutes till it gets frothy.
Pour over cheese and chile mixture.

bake in a 400 degree over for 15 min. Take heat down to 375 degrees and bake an additional 30 min.

Chopped ham can be added on the chile layer for a complete breakfast quiche.

This is the only one I have with cottage in it and sometimes I think I might be tempted to switch it out for ricotta and try it that way too. I haven't yet though.​

Cheesy Crust-less Quiche Recipe
INGREDIENTS
• 1/2 stick of butter (1/4 cup)
• 1/4 cup self-rising flour
• 3/4 cups milk
• 1 cup cottage cheese
• 1/2 teaspoon Dijon mustard
• 5 eggs
• 4 ounces cream cheese, softened
• 6 ounces shredded cheese( we like a mixture of cheddar, and other cheeses)
• 3 Tbsp grated Parmesan cheese
• 1/4 cup chopped green onions
• 3 slices of cooked bacon, crumbled * we cheat and buy the already cooked and crumbled kind at Aldis for under 2 dollars~ not as much fat either
• 6 cherry tomatoes, cut in half
METHOD
1 Melt the butter in a medium saucepan on medium heat. Stir in flour; cook, stirring until bubbly. Gradually add the milk; cook over medium heat, stirring occasionally, until sauce thickens. Remove from the heat; set aside to cool, about 15-20 minutes.
2 Preheat oven to 350°F. Combine cottage cheese and mustard; set aside.
3 Beat the eggs in a large mixing bowl. Slowly add the cream cheese, the cottage cheese mixture and the milk/flour sauce. Fold in the Cheeses and Parmesan cheese.
4 Pour into a buttered 10" pie plate. Sprinkle the top with chopped green onions and crumbled bacon. Arrange tomato halves, cut side up, around the top. Bake at 350°F for 40 minutes, until puffy and lightly browned. A knife inserted into the center of the quiche should come out clean. Let rest for 15 minutes, serve.
Makes 8 serving: Can add ham instead of bacon or any other veggie

We mix our bacon in instead of on top. We also placed our tomatoes cut side down and this makes it very very pretty. i think this is the prettiest quiche I have seen and I have eatten a lot of quiche at home and at resturants.
 
Ahhh....Quiche.....my hubby's favorite food. I make 3-4 quiche's about every other week....quiche is half the reason we started raising chickens....the husband absolutely loves quiche...I know, 'real men don't eat quiche'.

The greatest thing about quiche is you can make one out of just about anything. Let's see....I made a breakfast quiche a few days ago...grated up potato (like hashbrowns), sprinkled crumbled bacon over that, cheese and poured the egg mixture over it. I also made a chicken chile one with cooked chicken breast, pepper jack cheese and cut up canned green chiles...that one was a big hit with the hubby. And of course....his favorite...chicken, bacon and spinich. Mmmmmm....I'm getting hungry!
