I know nothing about it, but I think it's great you want to learn.. I would love to be able to do it, but so far have been too chicken..Pardon the pun.. lol
 
When you are told "ringing his neck", it typically means hold the chicken by the head and swing in a circle. It will break the neck. Husband was an Army Ranger. This was something they were taught in Ranger school, should they need to survive on their own for a while.
 
I used a killing cone made out of a bleach bottle. I loop a string through the bleach bottle handle and tie it to a tree. It worked great! I tried slitting the jugular but that involves having a very sharp knife and slitting correctly. Instead I use loppers. It is definitely a one person job and very safe since both hands are on the handle and no where near the blade. I know it is instant death and bleeds out very nicely.
 
I've never killed a chicken either but after reading "Storey's Guide to Raising Chickens" by Gail Damerow, I think I could. She describes axes, dislocating the neck, holding the head down with a stick and pulling up on the bird. She also talks about how to kill a bird in a way that will make it easy to pluck (by piercing the brain after it's killed), why it's essential to bleed out the bird, and picking methods. I think if you have the time to get a copy, this book would really help.
Good luck. It's a big step, but thousands of folks do it all the time...

A cone would be the best way in my opinion, but I "do in" chickens in my apartment on my own all the time.

What I do is take an old pillow case with a hole in the end just big enough to slide their head through. Bend their heads over the sink and with a freshly sharpened knife, cut down right behind the jawbone so you cut the carotid arteries. . Lean gently but firmly on the bird and hold it's head while it bleeds out and goes through it's death spasms.

Doesn't take any strength at all.
 
It's an easy job for one person. Multiple people just make it go faster with the work shared.

However, I don't see how you could butcher chickens without equipment. You need a pot to scald, some way to heat water, sharp knives, something to hold ice water to chill the bird, something to make the ice, a bucket for the guts you don't want, packaging .......

Also, some sort of table will sure make the job easier. It wouldn't be pleasant to do all the processing steps on the ground.
