Quickest maturing breed of the large breeds

Pluck ducks at the right age, scald well, and they aren't that bad to clean. The real trick is to get the scald water all the way down to the skin. Ducks are waterproof, so it takes some extra effort.

I use an EZPlucker, and also use duck wax. The last batch of Pekin, butchered at 8 weeks, would have turned out fine without the wax. The wax just gives a nice finish and saves a bit of tiny feather plucking around the edges.

If you butcher ducks just as they have a full crop of pinfeathers, then it is a real chore.
