All birds have an egg song, all Plymouth I've had are not so loud on their own. With cock birds they will join in the chorus and really increase the volume of egg songs. You'll not experience that with all pullet flock as a crowing bird certainly doesn't meet your criteria.

Second this, rocks are generally quiet, docile, and friendly. Rhode Island Reds are as well, though I've heard males tend to be aggressive.

Buffs are a good choice. Only time I've ever seen a buff get aggressive is when you get eggs while they're on the nest. I tended a flock of about 100 buffs. Very well mannered usually.
