Quinoa anyone??

Quinoa Soup
(this is a weight watchers recipe, adjust as you see fit

½ cup each: frozen peas, diced carrots, diced onions, sliced mushrooms, cubed cooked chicken, uncooked quinoa (rinsed if needed)
1 tsp sesame oil
1 tsp dry ginger
1 clove garlic, minced
3 cups chicken stock/broth
Salt/pepper to taste

In sauce pan/soup pot combine carrots, onion, and sesame oil; sauté until onions are just getting tender (2 to 3 min). Add mushrooms, ginger, salt, pepper, and garlic and sauté for another 2 min. Add peas, chicken and stock and bring to a boil. Add quinoa and reduce to simmer. Let simmer with lid on, stirring occasionally for 15 to 20 min. or until quinoa is completely cooked through.

You can add ½ cup of any additional veggie as long as you add ½ cup of stock to the total. For every ½ cup veggie and stock you add, you make an additional serving for the recipe.
 
I made a version of Katy's recipe using canned black beans. In a saucepan I dumped a can of black beans, a can of Rotel tomatoes, a cup of quinoa and a small handful of cilantro. Cooked until well heated and that's it! It was very good. I couldn't taste the quinoa though, I guess it's like tofu and absorbs the flavors of whatever you mix with it.

The only other way I've eaten it is with milk and sweetner for breakfast.
 
I have eaten it like breakfast cereal. just a little butter. quinoa has a slight roated/nutty flavor. a simple chicken stock will overpower the flavor. it is not as bland as tofu but close
