Raising free range chickens in Samoa

Hello, I'm based both in Samoa and New Zealand. I know very little about chickens, although I did previously own 6 plymouth rock chickens which I loved. Now that I travel regularly to our family farm in Samoa, I want to learn how to keep our chickens safe from diseases and pests without having access to the farm supplies found in New Zealand. Our farm is rural about 40 minutes from town. I learnt that adding cider vinegar to the chickens drinking water may help with worms. We appear to have very few chicks, that I believe could be from rats, the raised wooden nesting boxes are all empty. Recently, my uncle has shown interest in raising ducks. I'd like to know more on this and how to contain them from flying away and what breeds are ideal for the tropics. I'm interested in Peking ducks, although I'm not sure we have them in Samoa.
