That's such a sweet story!
You sound like me. My engagement ring is a 3 stone ring (1/4 carat total weight of the 3 stones combined) and our bands are just plain white gold (10K so they are harder and more likely to hold up to the abuse we put them through). All together we spent around $550 on our whole wedding set (and this was just recently - engaged in '07, married in '08). I hated the big flashy rings - they're just not me. I have small hands so the big ones look so out of place and I work in agriculture for my job and then come home to work on the farm, so I had to have something that wouldn't catch on everything.
So many people have questioned why I don't have a bigger ring and they just can't quite seem to get that I don't WANT a bigger ring. If they had a smaller ring that DH liked, I would have gotten that (I was seriously looking at promise rings with itty bitty diamonds, but he insisted on something a little bigger than that). To me the rings are simply symbolism - our love is what really matters. I told him all along that I was more interested in saving money to buy a farm of our own than blowing money on expensive jewelry. The farm is the place where we will build our future together and eventually raise our family.
DH and I don't really celebrate VD (or sweetest day either). We try to show our love for each other daily rather than only doing something special on a "special" day. DH is always doing little things here and there that shows me that he loves me and wants to take care of me. When he's working swingshift and he's gone before I get home from work, I often randomly come home to a sweet little note - that makes my day. I couldn't ask for more.
