If you are raising for show, you will not want to clip a wing. Ours would fly out, but return if they seen a feed bucket. If you hand raise the poults yourself, they will know you and follow you everywhere.
As for which variety to raise, for exhibition, only 8 varities are recognized by the American Standard of Perfection (SOP). We have a list of them on our breed club website at http://exhibitionturkeyfanciers.bravehost.com All 8 varities are considered heritage and rare varities.

All are the same as for the houseing ,caring and feeding - all are about the same as for noise , which isn't much my Ducks can be a lot nosier then the turkeys and as for which is best or tamer well all of mine are really good , they follow me all around when it's feeding time and when I call them they come running . I have had more troubles with my Roo's then the turkeys .
