I had to look up a couple of days ago.

To be precise it's removal of the keel and backbone of a whole bird to spread it open and enable cooking the breast meat faster.

........................ I just always liked to fix some of my older culls that way, after a good cold flesh 3 day rest and then i just spatchcock away.
 
Ok....................... So the heck with Chickens for one minute...................... I wanted to take a second to wish those us who know each other and share common beliefs in our chickens, and Ya'll know who you are, a very very Merry Christmas and a great holiday weekend. no, the biggest BLR project bird... I've been seeing him try to fan his wing, do the strut, and try to mate for about 2 or 3 weeks now as well. I'm up every day at 530, and gone by 630... but today was a later departial, ... so I guess he really could have been crowing for a while now... but today was the first I actually heard it.

The dark, looks awesome though. but he's almost 2 months younger than the oldest of the project birds... He's just about caught them in weight and muscle though... He's by far a more superior bird, quality and type wise though...
