Can anyone help me identify if these stringy red things are fapeworms, or just stringy red booger stuff?

Several birds of mine have been having gurgling/gasping issues, and these red gooey string things have been dripping out of the roof of their mouth. I’ve looked down their throat and don’t openly see any red strings attached, but if it’s further down I could be missing it.

Do gapeworms affect the sinuses/nasal cavity area too?

Yes, that's gapeworm. My pheasants have had them in the past. More common in pheasants than chickens.
Treatment: Fenbendazole at 20mg/kg for 3 days. Also another drug is Tetramisole at 3.6mg/kg for 3 days in their water. Usually will get rid of gapes. HTH
