If you sell to a 'middle man' or off the premises, of course, you do have to cool them according to law. I think it's silly, but that's only my OPINION and I know it just doesn't matter to the law what I think. I have lived in other countries enough to know that our way isn't the only way, and I'm here to say room temp eggs don't kill you, and they cook and produce better bakery if room temp. ( LOL except for certain exceptions of course!!! Can you post your angel food recipe?)

I personally refrigerate eggs I'm going to sell, just because most people expect it, but do not refrigerate my own eggs, or those of a few customers who expressly request room temp eggs.

Also, I don't wash them, and my customers know it. I wipe them off a bit with a damp rag if they're dirty, and if they really NEED washing THAT bad, I don't sell them, though if I say I'm sold out except for the dirtiest ones that I don't normally sell, some customers will insist I let them have them... I usually don't do so anyway, I say I need a few too you know!!!

(BTW, one of the VERY nicest people I've ever met was actually named Sunshine! She taught me how to quilt, and I always try to quilt a little 'sun' symbol in every quilt I make.

We are mixed on the refridgerate thing. I love to come in the house with eggs straight from the nest and cook them right then and there, now thats fresh.

But the ones that dont get cooked that day, end their day in the fridge. We dont wash our eggs either, just a damp towel before I crack the shell for cooking is all we do.
 
I live in Qld Australia where it is hot hot hot most of the year. I have never seen an egg for sale in the shops here that is refrigerated. Though I do refrigerate the ones from my hens.

Actually, I think we're both correct. Here's what trips us up:

We deliver eggs, and we also sell at farmers' markets.

[edit] we have a tiny village farmers market every other saturday here, and a local lady brings eggs in a cooler, but doesn't follow -all- the other stuff, (labels, grades, etc) she told me she's sort of 'flying by the seat of her pants' about it, since she's the sole handler of them and all. I hope she doesn't get in trouble about it, but it's such a local thing, I think/hope she'll be ok.

) work for Ohio EPA. I dot my Is and cross my Ts, if ya know what I mean.
 
LOL, I totally don't hate you! I think the EPA is a good thing in most cases, and as a former member of the federal bureaucracy, I can say that there are jobs that need doing, whether it’s appreciated or not.

If we were all good stewards, you’d be out of a job, but there’s too many examples of bad guys out there, so thank you for all those crossed t's and dotted i's!

My best friend in the whole world grew up on a dairy farm about that size, which means, so did I!!! If she had chores, I did too, so they'd get done faster!! Calves to feed, boxes to clean, cows to chase, but it was all fun cause we shared it. Her little sister of all things couldn't drink cow's milk!!! So I got to learn about goats too!!

Anyway, we've hijacked this thread enough! I'm going to get that recipe, gotta be ready for using up eggs when warm weather gets here again!
 
Yup, chickenfever, you've got it right.

Eggs last longer with refrigeration. However, if you want to, leave them out.

If you're going to leave them out as a general practice, don't wash them until you need them.

If you just want them room temperature for a recipe and they've been refrigerated, set them out just like you would butter. You can also put them in a bowl of warm water to bring them up to room temp more quickly.

Don't sell unrefrigerated eggs unless you've checked the Dept. of Agriculture and Health Dept. regs in your state.
