Do all roos make that loud noise?

Roosters make a whole range of loud noises. The primary is crowing - I'm guessing that's what you are talking about. Yep, they all crow. They also have a 'hawk' alarm cry and a 'ground predator' cackle to warn the hens. It's their way of defining territory and warning the flock.
