Yes still a pullet. The redness over her comb is probably nervousness/heat/stress - I would not think it’s a sign of a cockerel just by itself - still small comb.

Definitely pullets. The patterns over the wing feathers is a pullet trait. Males don't get that. The lack of male saddle feathers at 12 weeks only confirms the gender.

Nope. that's the interesting part about EEs. They can lay any color. Hatchery ones usually lay brown, green or blue. My EE lays a mint green egg, but you won't know until it happens.
