Rooster attitude changing?

We had a March 2019 Chantecler rooster start up like this too. First the stalking, then he bit my son and ambushed my daughter from behind a bush. Although he was the better male conformation-wise, he became pot pie. The other one goes about his chicken business and ignores people.
 
My Blue Maran rooster follows me around when I'm in it's area. I give him treats for him to give his hens, I hope he doesn't get mean I really like him.
 
I had a cuckoo marans rooster (about 13 months) who was doing that. It was making me a little uncomfortable. One day he ran up and "bit" the back of my leg. (Left a huge bruise.) I had a rake in my hand and without thinking I hit him with it. I felt horrible for doing so but he apparently felt worse. He stopped stalking me and gave me a wide birth after that.
We were planning to eat him but..
He actually turned out to be a pretty good guy. I had a hen who was setting on eggs. When the eggs hatched, he was so fond of the chicks that I gave him a reprieve. He was a very entertaining papa rooster. He would warm the chicks, call them for feed, and let them climb all over him.
I rehomed him along with some of his chicks with full disclosure. He is still living and the people who adopted him love him.
Not trying to discourage you from making chicken dinner. Lol. Just thought I'd share.
