Rooster left with only 1 hen

After a tragedy yesterday, we have only 1 grown hen to 1 RIR rooster...my question is will the rooster now try to mate with the other pullets in the coop which are not quite old enough or will he just torture the 1 hen that's his age? How does a rooster know which hens are "ready" to mate?
