Rooster qualities

I would keep both for now, and see how that plays out. It could be fine, or you could decide it's best to lower to one (I would keep the predator savvy one if he isn't mean to you or the hens Personally). I currently have about 12 (moving birds around so that number is going to fluctuate still) hens/pullets and 3 males with them (one is about 7, one is just about a year and the last is 4 months I think). Ad long as no one gets out of line, my girls are still happy and cleanfeathered with those ratios.
I always tend to forget that they're still very young & inexperienced! They would all make good roosters for individual flocks, but I cannot believe I got 8 roosters out of 14 chicks! 🤣 No more straight run from now on!

Ha, I currently have about 40 males and 20~ females in one pen from this spring. Usually I'm great with st. Run, but not this year apparently. Just finished making a cull list for like the 5th time this month.
 
It's a very hard decision for me & I want to make the right one, but I need to make it fast! lol, I have to go out every evening before roosting time & separate a few to prevent scuffles!
I would definitely butcher the 4 you are sure about, even if you can't decide between the last two. Removing 2/3 of the males should make a big difference.

When I need to cull chickens, I am always tempted to wait until I have the whole list decided. But I am always happier if I do the obvious ones right away, and then the pen is more peaceful while I finish thinking about the rest.
 
What are your goals for breeding?

I personally would not use a bantam rooster for my flock because I want larger birds due to hawks on the property. Also, I want larger eggs since recipes are written assuming large eggs.
My whole flock is bantams. 😅 We aren't deterred by the egg size, I've learned to cook with them! Plus, all my chickens aren't free range. We're looking in to a PVC chicken tractor for "outside" time, but they'll always be in a pen due to the out of predators.

I'm not really picky about breeding since how I'm mainly using them for eggs/compost.

How many bantam eggs do you use for a recipe calling for 2 eggs? I would think 3, but I'm not confident though to test my theory

I cracked eggs into a measuring cup once.
The ones I usually buy from the store are 1/6 cup each.
Now I can use small eggs by cracking them into a measuring cup until I've got the correct total. I don't have a 1/6 cup measure, but I can eyeball half of 1/3 cup, and most other amounts are easy: 1/3 cup for 2 eggs, 1/2 cup for 3 eggs, 2/3 cup for 4 eggs, 1 cup for 6 eggs.

I've also found that most of my recipes work fine with a bit of extra egg, so if I can't get the amount just right, I go for a little extra.

I find that the most human non aggression roosters are the ones that fear me and not easily caught.
Sometime the more handled and coddled roosters loose that essential element of fear of you and become those attack, spur and draw blood roosters we all dread.
Both are beautiful. But beatiful is what beautiful does.

This is SO TRUE! I have another rooster (one that HAS to go) & from day 1 he was my favorite. He let me hand feed him & he always ran straight up to me when I came in to the area. Now, he's the worst one! He is very cocky & thinks that I won't put him in time out! He's a mean little sucker.
