Yes you can eat fertile eggs. Just collect the eggs on the day they are laid so that the hen can't incubate them. Some hens want to brood eggs and others do not, just depends on the breed.
 
Thanks for the info, I should know this stuff but I've not raised chickens before. My peeps aren't ready to lay yet and the verdict is still out on my Millie being Billie. I've searched on line images of adult R I Rs. Many hens look like her and the Roos have much larger combs and whattles so, I wait for the crow. As I said before, I don't want to give up Millie/Billie unless she/ he becomes too aggressive. Right she is a sweet pea but is queen bea of the roost.
 
I'd say roo. My roo was a wild card, pullet turned roo. So we named him Wild Bill. No longer Millie.
