Roosters or Hens?

They're probably looking at their comb/wattle development. I'd look for them to start squatting. All of mine picked up that habit very close to point of lay.
Oh interesting! How can you tell the difference between lay squaring and simply laying/relaxing in the dirt?

Oh! And spread their wings? I know exactly what you’re talking about.

Yep, a little out to the side. Mine shuffle their feet a little too. It's cute, but kinda awkward, since I think it means they're confusing me with a rooster, haaaaa...As long as they don't expect me to dance or do more than provide refreshments and protect them, we'll be good!

Mine do it while I'm carrying something heavy an they make sure to do it right in front of me so I end up doing a little dance in order not to step on them. That's all the dancing they get though.

I hear ya! I can't walk normally around mine, I have to just barely lift my foot and scoop with it to move them, then step down. I still occasionally catch one of 'em's foot briefly since they can't understand that I'm an incredibly ungraceful giant compared to them.
