Rotating hens for best egg numbers?

I have a flock of 29 egg layers with 2 generations represented. i have 15 birds on order to replace the first generation and have a few questions.
1) My coop can hold 30 chickens. Do i need to hold the "3rd" generation out until they start laying? The weather will be nice and they have about a .4 acre run to cruz around in. Their run is fenced and protected.
2) I read that chickens laying will peak around 2 years. is this true?
3) I would like to get in the habit of replacing half the flock with a new generation once a year. This means building a brooder / young chick hut to let them grow until they reach egg-laying age.
