If I breed my tailed araucana rooster to a non araucana hen can they produce a rumpless bird? How does that work? What if I breed him to another araucana hen?

This post is entirely predicated upon the understanding that your bird is an actual araucana not a hatchery EE

Rumplessness is the araucana trait that im least studied on aside from maybe the make up of willow pigment in legs.

I think that in general Rumplessness is dominant so a bird cant be tailed and be a carrier of rumplessness, which is why Araucanas will still throw a tailed bird once in a while, because they can be split for the gene and still be rumpless.

So if you are breeding Araucanas and your roo has good type, color etc, but a tail then he might be usefull to breed back to a rumpless hen in hopes that some of his traits will be passed to the 25-50% rumpless birds that his pairing would produce.

However he wont be able to carry rumplessness on to any offspring if mated to a tailed bird*(probably, here is a web page which actually lists all the types of rumplessness
