sale price for processed meaties?

I pre-sold my first batch at $3 lb.

My second batch I already have pre-sold at $3.50 lb. And after explaining to people why my prices went up they understood.

I am raising a bird that is going to be raised 12 - 13 weeks of age not 5 - 8 like the cornish X.

Plus, people come to my home all the time and see how they live. They are happy to see them running on 2/3 rd's of an acre in side electric fence and doing what chickens do.

But that being said I am looking to raise may be 25 - 30 cornish x with my next batch of birds for people to have a choice.

People love them for Thanksgiving instead of turkeys. A 15 to 17 (dressed weight) pound cornish x has a better meat to bone ratio than a turkey of the same weight.
 
Around here, non-organic, pastured chicken goes for around $3.50/lb whole. Organic birds are about $5/lb. One farm charges $22 in advance for their organic/pastured chickens which avg around 5lbs after 7-8 wks. Of course this is in New England, where everything is expensive!

how long does it take to get a chicken to 17lbs dressed? I don't think my GOOSE weighs that much!

It takes me about 1 hour to dress my turduckhen then about 6 hours to roast it.

thanks! I was sort of wondering how many WEEKs it takes to raise them to that size... but really? all that stuffing birds in other birds doesn't take longer than that? I object to people eating waterfowl, because they have cute webby feet, but a turk-hen sounds delicious!
