I use sand and I really like it. I also just built a small covered winter run and filled it with sand.
I know sand has no water absorbing properties but my coop and run is dry.
I found that wood chips absorb moisture and smells, and the sand doesn't hold moisture and there is no smell, for me anyway.
I also got to note, I don't keep water in my coop so that cuts down on moisture and I also have a small fan that exhausts the coop air outside.
So far, this is working for me.
Next year when I build a bigger coop so I can get more chickens, I'll be using sand for sure.
