I just read in a chicken book that they're a newer sex-link hybrid developed from the Blue Plymouth Rock and Plymouth barred Rock, and possibly other breeds. The male chicks will have a white dot on their head and grow to be lighter in color. It also says it's a trademarked name so is only available through licensed hatcheries. Do you end up ever trying to breed any?

You have to breed a barred female to a non barred male to produce barred sex links. Males will have the barring gene and females won’t. 2nd generation sex links won’t actually be sex linked.

so what 2 breeds and sees will get a sapphire gem? a Plymouth blue rooster and a barred Plymouth hen?

What's a Plymouth blue ?
If it's a Blue Plymouth Rock then yes
I've also seen male SGs called Plymouth Blues. Those wouldn't work
