I have a Sapphire Gem rooster, too! He went through his hormonal phase, which was a bit of a nightmare, but he is now the sweetest baby. He still does not like to be petted, but he listens to hand/voice commands, he is our main protector and has tried to fight a hawk on multiple occasions (though I tend to step between them first, so he has yet to really be able to fight it), and he tidbits everyone and everything including chipmunks and finches.
Also, I read back a page or two and you mentioned that they are known for being aggressive? I had read something different. I had read that Sapphire Gems are some of the more relaxed, friendly roosters, unless you are a predator. Then all bets are off because they will flip their witch switch so fast that you would think he had an evil twin.
Really!? Mine is a camera hog. Every time I try to take pictures of the others, he steps in front and fluffs up.
But he also used to watch the exploding chicken cartoon on my phone when he was just a chick, so maybe he just likes the phone. 
There is one baby chipmunk that actually goes to him now and take what he offers. The others do not. They fear the giant bird with the loud voice.Oh I bet yours is a HOOT!! Tidbitting chipmunks must have them very confused!
Quin is really chill for such a big fellow. I am lucky he is such a good boy.
It's good to know yours isn't an idiot either.
I hope yours manages to grow an impressive tail soon.

His size is going to impress you. Mine is almost a year and a half old and he is still growing! I do not even bother to keep track of where mine is. He is always near me, and I have absolutely no fear in turning my back on him. I regularly kneel in the run, and he likes to come over and wipe the muck from his beak onto my neck. It is so gross, but at least he is not attacking.
