Sauerkraut recovery

I've had a big pot of sauerkraut going for about 3+ weeks now. I had DBF try it last night and he said it was "ungodly salty". He also said that it wasn't tangy at all, just salty.

Dang. Clearly I overdid the salt.

So, last night I rinsed it all off in a colander and put it into a pot of fresh water. This morning it smelled like, well, sauerkraut.

Throughout.
My.
Entire.
House.

Maybe it'll start fermenting in earnest now that there's not so much salt in it. I'm keeping my fingers crossed!

Anyone else ever had this happen?
 
You brave, brave soul!!! I dont have the you-know-whats to try and make sauerkraut... Hope it ferments like the dickens

My dad used to make it when we were kids cause mom hated doing it! I don't have the patients to let it just sit there or I would try to do it myself. Good luck.

Peel and quarter a few raw potatoes. They will "pull" part of the salts and acids from the kraut.

I've heard the potato theory too! Worked in my chili that I though I was using chili powder in and instead I glanced away and grabbed the seasoned salt bottle....grrrrrr
