i know zucchini are plentiful now so if you need an idea here goes. slice zucchini in half the long way and scoop out insides so you end up with a boat. dice the removed pieces and saute with diced onion in good amount of butter...in another pan.. saute italian sausage and crumble.. add cooked onion/zuccini mixture to sausage and add enough italian seasoned bread crumbs to absorb the liquid. stuff back into the boats and top with parmesan.. put into glass casserole and cover with clear plastic wrap and put into microwave.. process till boats are crisp/tender or if your kitchen is cool bake 350 with some water in the bottom of pan to keep moist and bake till tender.. these are great
