Oh I just love my squirrels; in squirrel dumplings, squirrel gravies, fried squirrel(esp those young tender ones), squirrel gumbo, needless to say the population gets regulated around here pretty often. LOL "It don't taste like chicken either"

They are tasty aren't they? Don't know why, our pack rats look like squirrels with a scrawnier tails, but I have not been able to put one in the stew pot. For all the electrical wiring they eat can't help but think they will taste like plastic.
 
My Mom has fixed us many a meal of squirrel and dumplings while I was growing up. We would fight over the brains. LOL. They were full of cholesterol. for little children they actually were good for their growth. We did not have a lot of protein unless it came from wild game or fish or seafood. It was always fresh and pure though. Much safer than what we are given now.
Oh, Lucky me, My Br. went hunting this week for wild hogs in north eastern NC . He and the men he was hunting with killed 8 that had ravished a mans hugh corn and peanut crop. He brought me two wonderful tenderloins and a pack of fresh made sausage. yum yum. Jeff is your mouth watering yet. LOL Gloria jean

Now that is JUST gross. Lord have mercy we were poor but thank the Lord never that poor. Yuk, yuk and double yuk.

As a teenager I learned to cook wild game, squirrel, cotton tail, pheasant and venison, before risking store bought meat. Even tried muskrat, (not bad) and possum, (never again), and woodchuck, (2x on the never again). Might have been how I tried to cook the last 2, as I remember they were greasy and about as chewy as rubber bands. Acorn fed squirrel might not be acorn fed Spanish ham but it is good eating.
