Sebright or Old English Game?

I'm looking for a small bird that tolerates confinement, is fairly quiet, easy to handle, and doesn't fly. I want to be able to use this bird for showmanship at the Florida State Fair. I was really interested in the sebright, but everything I've read says they can fly pretty high, and I don't want it to fly over our fence into the neighbors yard. I then started researching OEGs, but everything I've read says they are unkind, cannot tolerate confinement, and are noisy.. Is this true? Which bird do you think would be the easiest to handle for showmanship? Are there any other birds you reccomend? Thanks!

I do not know much of anything regarding showmanship but will say................bantam cochins are a fanastic bird to fit what you are looking for. Confinement, fairly quiet, easy to handle and most do not fly. I have some who can clear a six foot fence - but they climb/fly up the side.
