I am ashamed to say I ate goose liver pate on my 30th birthday as an appetizer, before I also ate filet mignon for the first time. (That was a great birthday... Nearly 30 years ago.) I say ashamed because I knew how it was produced back then... And I've never had it since.

Now, should I be offered pate at the home of a friend who processed a goose, that would be different. No friend of mine would force/tube feed a goose just to get good tasting liver.

Ron, turkey sex isn't messy, just ugly. Most of the time the Tom just stands there on the hen's back, treading and treading. But he gets such a perverted expression, eyes closed, beak open, drooling and panting. The hens have to be patient AND have strong backs! I am so surprised they squat for that abuse.

At least chicken sex is quick.

Pheww! That is a relief! Ugly is better than Messy...Wait a minute.....

I had Goose Pate around 25 years ago at a relatives 50th birth party. I would not eat it now though.
 
you all are feeding my need to have turkeys again...Back in the day my daughters got 6 for a 4-H project then Newcastle Disease put the kaybosh on any exhibiting poultry so they became dinner.  They were hysterical and I free ranged em until they started causing problems in the neighborhood.  Apparently they had no respect for private property and didn't know where ours ended.  One day the neighbor across the street came over to tell me they were in his yard...ooops.... as I apologized he stammered  " I  I didn't know what or how to do uhmmm deal I mean well... They won't be intimidated."  I laughed because I pictured them 4 BRs and 2 Naragansetts  moving slowly out of his way then going right back to their scratching and pecking as he flailed about and threatened.   I couldn't see them but went out on my porch and called them and they came running , wings down and out rocking back and forth the hustled across the street. My neighbor couldn't believe it.  He said something equally eloquent to his earlier comment and went home.

They were fun but the best thing about them was how they tasted!


That's a funny visual. I'm sure our turkeys will be wandering around but luckily there's nobody across the street but a bean field and if our neighbors have a problem with our turkeys I will kindly suggest they erect a fence, like they told me to do when I told them their chickens and ducks were constantly in my yard ;)

Not to offend anybody, but Pate is a forced meat, or in other words you throw the liver or you can use any meat in a food processor and grind it up with some egg whites. Foir gra is Forced feed goose liver which the lower grades and scraps are made into force meat, but the good stuff is sold whole for a pretty penny, Absoutly melt on your tounge tasty, which has been done since the egytian times and can actually accure naturaly when wild birds gorge themselves to get ready for the winter trec of migration. Which lead us to doing it to suit our (man kinds) needs/wants. I have a pdf somewhere on the history.....
 
SCG I wish I knew you were in the market for Dark Cornish, I have some that just started laying, they are hatchery stock but I have a couple hens with the pearl eyes. They are really hard to come by from reputable breeders as they normal cull the ones they don't like. If you have issues with yours send me a pm and I'll polish egg bomb ya... You pay the shipping. It will be a few weeks b4 I get the breeding pens up though, right now it's like somebody mentioned about taking turns on the hens around here. Here's a pic of the pearl eyes in the middle right. Her lacing is not the best but I was gonna work on that.
 
X2! If I'm not mistaken, that is turkey for At least when my hens do that, it is... Okay, the lack of incubator space is already causing issues...I don't have a lot of time to set up auctions, so I've only got one up for the Chocolate Ameraucana project because I could hit 'relist' and go...they're piling up!!! I'll be buried in eggs before long!!
Do I see more egg bombs coming? And where do I post my address. Just kidding by the way...both my bators are full until I pull clears this weekend
really I've even met ronott1 I am a woman don't want to be a girl again either.....well I have chicks making quite the racket and how many times have you all candled your eggs? I can't since I have chicks hatching in there....have about 4 dozen turkey eggs so far to put in there Sat or Sunday come on chicks hatch so you can get the flock outta there LOL I knew those turkeys would know I couldn't put any in the incubator for a few days. I have 2 toms who look at each other and mate the air who knows why even if they have a hen laying down right by them if only I knew turkey sign language they just make that puff sound....when they were younger I caught them being lovey dovey to the 2x6 I guess that was practice.... I have chicken eggs in buckets tried to sell them on craigslist and people called wanting to know if I had chicks :barnie really the ad said hatching eggs or they wanted to buy grown stuff hummm I'm going to reword that ad tonight

I eat both. I raise both. ANd I totally disagree with the dark parts being less healthy. A corn muffin is less healthy; a chocolate chip cookie is less healthy. Fill up on good meat and a pile of veg ! Sorry-- I don't follow the "low fat is best" rubbish. THat was debunked years ago but it still persists on the morning TV shows. Ughhh

Your home grown bird will grow up without antibiotics and in a cleaner environment and with less stresss. ( I"m not anti commercial, rather home grown is better.

YUK....none of those sound tasty to me.
 
Ohmygod I'm franking out I need help please. We are getting a large thunder storm that knocked out power almost an hour ago, the huge system isn't supposed to clear til early morning. I just got off the phone with the power company and they said lightning struck the transformer, and knocked it down. They can't replace it until the storm subsides, and even then it could take up to 2-3 hours to put a new one up and re wire it. I'm looking at possIbly Nine hours without power to my incubator :( will my egg survive, how can I keep the temps from dropping? How do I keep them warm that long so I don't lose them ? HELP
 
I am not a fan of organ meat. I have never eaten it until I went to Culinary school where tasting things is part of the class. I still wont eat MOST organ meat.. Except Foi gra at 32 east in Delray Beach FL. Forced meat or pate is another topic. You can keep it, it's kinda like scrapple back home, you never know whats in it.

wrap it up. Then put in a box.
My grandma hatched chicks as a kid in their cook stove. Have anything for heat?
Oh.. and of course don't open the bator.
