I just opened up a self serve egg stand on my property and the only thing I’m still unsure of is if any eggs don’t sell what are we doing with the eggs until the next day? I have them in a cooler on racks that have ice packs under the racks so they aren’t refrigerator cold, but they are not counter temp, do I bring them into the fridge until the next day or leave it in the cooler and just switch out the ice packs each day?

What are your local regulations in regards to egg sales?

Have the eggs been washed at all? If bloom is intact they don't technically need to be refrigerated (your regulations may disagree with that), but I would not refrigerate in between days to avoid condensation from the change in temperature possibly affecting the bloom.
