On the two darks, it's the solid black feathers. Females get partridge patterned feathers, never black, while males grow in black and silver feathers. On the blue and gold one, it's the dark red feathers over his shoulders.

Brill thank you, I think the darks may be some kind of dark salmon as they were bred from a black salmon and are starting to get some salmon colouring though underneath
