In the gamefowl circle all cockerels are called stags. It is just a preference I guess you could say, no real meaning to it. Gamefowl owners have different terms (thought some of the same too), such as brood cock, brood hen, brood stag, Bull stag, etc..

As for Shamo's running, they're a very gentle breed. My stag (really, he is a cock being he is past 1 year of age, but being as they are slow growers and he should mature at two years old that is when I choose to call him a cock) will follow you around, stand beside you, etc. I have only ever been "attacked" over feed and it wasn't on purpose I believe, I believe he was just in such an "uproar" over feed and starting to chase it that once he caught up he thought that was the next step (who really knows?).

He never hurt me, and I say not purposely because after that he stopped and just looked at me (not in a aggressive manner). I wonder if maybe he just wanted to get my attention? Either way I trust him more than all of my other birds, I will not have a manfighter, but I always watch my birds closely (Even my little bantam who has never even pecked me lightly) anyway because any chicken could be set off for a number of reasons. I can sit down on the ground with my stag looking me nearly in my eyes, pet him, etc.. And not have one worry.

There is a lot of information out there- but anyone curious about looking into them, you have to watch where you learn. A good bit of information- but information is sometimes not always from people who truly know the breed (no disrespect to them intended, just honest opinion upon observation). If you truly want to know the breed, I can give you a few links and possibly even point you to a Shamo breeder or two, who I have made my "mentors".

I'm still a newbie, I have only one stag (got him at 6 months) and soon getting a pullet hopefully. Most of the information I could tell you is based off of what I have heard from longtime breeders, research, and observation via my own stag.
