36 + 1 small one (which I dont think I should use). Most are clean, but a few are dirty. Should I wipe the dirty ones, leave them be or dont use? There is one XXL one in the upper right corner.

Why is candling done on Day 7.  To me candling on Day 10 is more informative?

I don't know. That's a good question. I suppose because it's a 1/3 of the way through incubation. I usually candle on day 4 to check fertility. On larger fowl eggs, day 10 is standard. When I set eggs from my own flock, I'll candle every single night! :D
